Ricotta pudding This is an Italian dessert that can bring to mind pudding. This baking is made, among others, from ricotta cheese. Depending on the specific recipe, in Budino di Ricotta you will also find raisins or fruit in syrup (for example peaches). The dough is delicate, creamy and literally melts in the mouth.
To surprise the guests during Easter, it’s worth preparing ricotta pudding. This Italian specialty is a great alternative to traditional grandmother – on the holiday table it will turn out to be a real hit.

Preparation Italian dessert grandmother It is not complicated. Even those who have never prepared such baking should deal with the implementation of the recipe. What ingredients will be needed? List autumn:
- 500 g ricotta cheese;
- 90 g of sugar (about half a glass);
- 50 g of potato starch (about two tablespoons);
- 3 eggs;
- a pinch of salt;
- grated lemon peel;
- 60 g of raisins;
- 1 can of mandarins in syrup;
- Some butter to oil the mold.
Preparation method:
- First, we start preparing the ingredients. Drain the ricotta cheese and blend until smooth. In turn, mandarins also drain and cut into smaller pieces. We brew raisins.
- We separate yolks from proteins. Grate the yolks with sugar, add grated lemon zest and starch. Proteins, in turn, whip rigidly.
- Mix the yolks grated with sugar with raisins and mandarins prepared earlier. We add beaten proteins and mix everything thoroughly again.
- We prepare the form for grandmother. First, grease it with butter, and then pour in the previously prepared mass into it. Bake in the oven preheated to 160-170 degrees Celsius for about 30-40 minutes. In practice, each oven is different – therefore, in some cases you can extend the baking time. You should observe and check (for example, with a wooden stick) whether the baking is ready.
Ricotta pudding You can serve cold. Before serving, it is good to decorate it with grated lemon peel. This unusual dessert will be perfect on the Easter table. It will certainly taste your guests – that’s why it’s worth preparing it.
