Ingredients for sponge cake:

  • 4 eggs,
  • 50 g cukru,
  • 30 g kakao,
  • 120 g of cake flour,
  • A bit of salt.

Ingredients for chocolate cream:

  • 300 g of dark chocolate,
  • 100 g of milk chocolate,
  • 500 g cream 36 percent,
  • 40 g of brown sugar,
  • A bit of vanilla extract.

Couaring ingredients:

  • 100 g of butter,
  • 80 g cukru,
  • 3 tablespoons of milk,
  • 30 g kakao.

Additionally:

  • 80 g chocolate in chips.

Make a sponge cake. Separate the protein from the yolks, add a pinch of salt to them and start whipping with a mixer at medium speed. When the foam begins to make fluffy, gradually add sugar. Then add yolks, one after the other, without stopping mixing. Finally, pour in cocoa flour and gently mix with movements from top to bottom so as not to lose a fluffy consistency.

Pour the prepared dough into a cake tin with a diameter of about 18-19 cm. Bake at 170 ° C for 30-35 minutes, to a dry stick.

Prepare chocolate cream. Break the ankle plates and put them in a bowl. In a saucepan, heat the cream with sugar and extract. Mix so that the ingredients combine. When it gets hot, pour the chocolate in a bowl. Stir until smooth and uniform mass is made. Leave to cool completely, then the chocolate cream will start to solidify.

Fold chocolate sleep. Divide the sponge cake into two or three parts, depending on how high it has grown. Transfer the tops with prepared cream.

Finally, prepare the topping. Melt the butter with sugar, heating in a saucepan. Add 3 tablespoons of milk and mix until a smooth mass is formed. Take off the saucepan from the heat and add cocoa. Mix vigorously with a whisk. Pour the coating on top of the chocolate sleep. Sprinkle with chocolate chips. Cool in the fridge.
