Parking is a meat created for a barbecue. Has some fat, so it doesn’t dry out, and If you marinate it well, it will be extremely tasty and aromatic. And that’s what it’s all about. But it is not enough to throw the meat on the grate and count on a miracle. The secret lies in the marinade, which will not only add taste, but also softens the meat, will make it easier for even thermal treatment.
Ingredients at 1.2 – 1.5 kg of pork neck:
- 5 tablespoons of oil (preferably rapeseed),
- 2 tablespoons of honey (not too much, there is only a light sweetness),
- 3 tablespoons of soy sauce (will be depth),
- 2 tablespoons of mustard (preferably French),
- 2 tablespoons of tomato concentrate,
- 3 cloves of garlic (squeezed by Prague)
- 1 small onion (grated on a grater or very finely chopped),
- 1 chilli pepper or a pinch of hot peppers,
- 1 flat teaspoon of salt,
- ½ teaspoon of pepper,
- 1 teaspoon of smoked peppers,
- 1 teaspoon of marjoram,
- Several branches of fresh rosemary or thyme,
- ½ cup of beer (preferably clear – if it stays, you know what for),
Method of preparing the marinade for the neck:
- Mix everything together – in a large bowl you combine ingredients for marinade. You start with oil, add honey, soy sauce, mustard, concentrate, spices and beer. Add garlic and onion at the end.
- Cut the meat into slices about 1.5 cm – not too thin, not too thick.
- Massage the marinade into meat – each piece is to be properly fired.
- Set aside in the fridge – a minimum of 6 hours, but it’s best to leave for the whole night. Let him bite.
Write the grill, wait for the coal to get gray and warm, and only then throw in the meat. Grill the neck after 6-8 minutes on each side, on medium heat. You can add a few branches of rosemary to the grate. Do not move the meat every now and then. Let him brown, let him catch the skin. As it peels off the grille, it means that it is ready to overturn.
The neck tastes best with something simple. Baked potatoes with garlic butter, crunchy salad with cucumber and dillor a classic roll and some garlic sauce.
Picnic is just the beginning. Every weekend until September, and sometimes even October is a chance to throw something on the grate again and meet friends. However, be prepared for the fact that once they try pork in this edition, they will ask for it at every opportunity.
