Do you love ham, but you are not interested in consuming a lot of preservatives, E’s and other additions to keep it “as new” as long as possible? In that case, you have several options – among other things, you can prepare the ham at home.

In many people, there is the idea that cooking ham is a kind of magical ritual, which is needed at least two shamans and three scientists. But like many other things in the world, this is not a problem as it may seem at first glance. What do we need to make ham? Actually, only quality meat, salt, spices and enough time. To achieve the best result, get a pork neck or shoulder for these purposes. However, it is logical that you can also start poultry ham, it all depends only on your own decision.

It takes time

We will not insist anything – a really good ham will not be done in minutes. First, we will have to load the meat in salt brine, ideally for a week. At least 50 grams of salt need to be used per liter of water. You can also add a pinch of sugar and then of course spices such as bay leaf, garlic, or juniper and new spices. Don’t worry about meat, salt is a good preservative, so nothing wrong will happen in a week. In addition, you will keep everything in the fridge, which is another warranty.

Cook it slowly, really slowly

After the specified time, the meat will be ready to take another step on the way in its transformation into ham. It is now up to us to rinse it well and slowly cook at low temperature (maximum 80 ° C). It will take at least 2.5 hours, depending on the size of the piece of meat. Once the meat is cooked, remove it from the water, wrap it in foil or aluminum foil. The meat should be slightly burdened – it will be enough to put a coffee jar on it – and then let it cool perfectly.
