The cream soups are very popular, often replacing these more traditional options on our tables. Today we want to propose a recipe for cream onion soup – These types of dishes are extremely popular even in France.
- 8-10 onion,
- 6 potatoes,
- 4 cloves of garlic,
- 1.5 liters of poultry broth,
- 50 ml of white wine,
- 50 ml of cream 30%,
- 1 tablespoon of butter,
- 1 allspice,
- 2 bay leaves,
- 50 g of grated cheese,
- a little nutmeg,
- half a teaspoon of ground hot pepper,
- half a teaspoon of dried lovage,
- 1 flat teaspoon of salt,
- Pepper to taste.
Peel the onions. Cross -section first in half and then into smaller pieces. Peel garlic, chop finely. Peel the potatoes and cut into cubes.
Melt the butter in a deep frying pan. Put the onions and fry on each side on medium heat. It should soften and clearly fry, which may take up to 15 minutes. If it gets brown – it doesn’t matter. However, it cannot be black, so mix quite often. After 10 minutes, add garlic and fry the whole. Pour the wine and simmer until it evaporates gently.
Transfer the onions and garlic into the pot. Add potatoes. Pour the whole broth. Put allspice and bay leaf. Cook for about 20 minutes. After this time, season with nutmeg, dried lovage and ground sharp pepper.
Pull allspice and bay leaves. Blend the whole to a smooth cream. Add sweet cream and boil again. Serve with grated cheese.
