Mediterranean cuisine is more and more liked by Poles. It belongs to, among others Halloumi cheese with a salty, slightly nutty taste. After processing on the grill, it gets golden, crunchy from the outside, and in the middle soft, but still elastic, unlike other products, which makes it ideal for grilling. It also impresses with the richness of nutrients.

Halloumi cheese comes from and is one of the most famous culinary exports of this island. It is traditionally made from sheep and goat milk, although you can now come across versions with the addition of cow’s milk.

An interesting fact is that Cyprus fought for this product to have a protected designation of origin (PDO) in the European Union. And so from 2021 only cheese produced on this island according to a traditional recipe can be sold in the EU as “Halloumi”.

At first glance, this cheese resembles a popular mosarella. However, it is more elastic and compact.

The Halloumi production process is complex and precise. At the beginning, the milk is heated to which the lieutenant is added. Then the cheese forming, re -heating and immersion in brine.

It is thanks to the final stage of production that cheese maintains durability and can be stored for a long time without deterioration. In this product, you can also find fresh mint leaves with antibacterial effects.

Halloumi is quite caloric – 100 g provides 313 calories. We can eat it instead of meat because It is a source of protein – In the same amount it has as much as 20 g.

This cheese is rich in calciumwhich is an indispensable building block of bones and teeth. Therefore, it should be consumed by older people who have a greater risk of developing osteoporosis.

Halloumi also has B vitamins and magnesiumwhich have a positive effect on the brain, nervous system and muscles. In turn, vitamin K is responsible for blood clotting.

There is no fiber in its composition, but there are a lot of saturated fats and cholesterol. That is why it should be served with vegetables. It blends well with grilled peppers, zucchini or tomatoes.

Ingredients:

  • 200 g Sera Halloumi?
  • 1 red pepper;
  • 1 yellow pepper;
  • 1 green pepper;
  • 1 zucchini;
  • 1 onion;
  • 1 tablespoon of olive oil;
  • juice squeezed from half a lemon;
  • several fresh mint leaves;
  • several branches of fresh parsley;
  • Salt and pepper to taste.

Preparation:

To make a grilled halloumi, we prepare vegetables at the beginning: cut the peppers into strips, zucchini into slices, and onions into feathers. Put the prepared vegetables into a bowl, sprinkle with oil and season with salt and pepper.

First, we grill the vegetables until they are soft, and only then cut into thick slices cheese – it must brown, which usually takes about 2-3 minutes on each side.

We serve hallomi on a plate with vegetables. Finally, sprinkle it with herbs and sprinkle with lemon juice.
