The remains of vegetables from the fridge often end up where they do not have to, in the basket. At the same time, a little faded carrot, lone eggplant and pepper can be transformed into a great homemade pate. Just bake them until golden brown, mix with several flavorings, and in a moment there is a soft, taste -rich spread, which is suitable not only for bread, but also as a dip or basis for wrap.

Fry the vegetables in the oven
The basis is a vegetable roasted in the oven, where it gets a beautifully sweet, earthy taste. The carrot softens and relaxes its natural sweetness, the eggplant softens so much that it almost falls apart, and the pepper gives the entire mixture. It is important to bake everything at the same time, without complexity – calmly on one plate, with just a little oil and a pinch of salt.
“The eggplants contain vitamins B, vitamin A, minerals mostly potassium, iron and phosphorus. They help to reduce blood cholesterol, improve the peristalsis of the intestines and have antioxidant effects,” reveals Mgr. Zuzana Douchová.
A drop of lemon juice and olive oil
Once the vegetables are ready, the mixing phase comes. There is a drop of lemon juice, garlic, quality olive oil and calmly a teaspoon of Dijon mustard. This creates a fine, sticky spread, which is excellent for both a slice of bread and Ik fresh vegetables or as a basis for sandwiches.
The magic of this pate is not only in taste, but mainly in the fact that it gives the second chance to raw materials that would otherwise end up in the basket. So besides enjoying you, you will do something for the planet. And exactly such meals deserve an honest place in every kitchen.
