Potato porridge is one of the most popular Czech side dishes. This is mainly due to its softness and perfect taste. But how to prepare it to be fluffy even without cream or milk? The answer is buttermilk, which in addition to fineness gives it slight acidity and enhances the natural taste of potatoes.
To prepare mashed potatoes, it is best to use potatoes with a higher starch content, such as the russet variety. Peel them, cut them into the same size and cook classic in salted water until soft. Allow them to rest for a while after dumping to evaporate excess water.

Combine buttermil with butter
Meanwhile, heat the buttermark with butter in the pan. Make sure the mixture does not cook, but only lightly bubbling. Crush or push the potatoes through a sieve and gradually add warm buttermark with butter. Stir until a smooth creamy consistency is formed.
Thanks to buttermilk, the porridge will be lighter and more intense. So it fits perfectly as a side dish to roast meat or vegetables, but it tastes excellently, sprinkled with fresh herbs.

The buttermilk also brings health benefits. It is rich in probiotics that promote the digestion and health of intestinal microflora. It also contains calcium and proteins that benefit the bone and muscles. And last but not least, thanks to the lower fat content, it is a lighter alternative to normal cream or milk without taking its use in the recipe to the final taste.
