Broccoli soup with bacon It is light, well seasoned and full of healthy vegetables. You will find of course broccoli, as well as carrots, onions and garlic. The dish has an interesting taste thanks to the appropriate spices, Contains thyme, nutmeg and green parsley. The taste of the soup is emphasized by the add -on Parmesan cheese and fried, smoked bacon. Such a dish is perfect for dinner for the whole family.
For preparation broccoli soup with baconyou will need:
- 1 broccoli,
- 1 carrots,
- 1 onion,
- 2 cloves of garlic,
- 2 tablespoons of butter,
- 2 tablespoons of wheat flour,
- 200 g of cream 30 percent,
- 500 ml of poultry broth,
- 50 g of Parmesan cheese,
- 150 g of smoked bacon in cubes,
- half a teaspoon of thyme,
- half a teaspoon of parsley,
- a little old nutmeg of old,
- Salt and pepper,
- Frying oil.
You can eat ready soup with a slice of fresh bread or a baguette.
Divide the broccoli into florets, peel the stem and cut into slices. Boil water with a little salt in a pot. Put the broccoli and cook for 5-6 minutes, until it is soft, but still firm. Strain and set aside.
Finely chop the onion and garlic. Peel the carrots and grate on a thick grater. In a large pot, heat 2 tablespoons of butter, add the onion and fry on medium heat until they went down. Add garlic and carrots, fry for another 2 minutes, stirring.
Pour 2 tablespoons of wheat flour, mix thoroughly and fry for about 1 minute, stirring vigorously. Gradually pour in the broth, stirring so that no lumps form. Then add the previously cooked broccoli.
Season with salt, pepper, thyme, parsley and a pinch of nutmeg.
Cook on low heat for 5 minutes, then pour in the cream. Boil. Add grated Parmesan cheese and leave for another 5 minutes.
Cut the bacon into cubes separately. Fry in a pan until browned and crunchy. Add just before serving.
