- 500 g of chicken or turkey fillet,
- 1 tablespoon of olive oil,
- 1 tablespoon of Provencal herbs,
- 2 cloves of garlic,
- 1 egg,
- 1 tablespoon of cream,
- 50 g of hard yellow cheese,
- about 150 g of panko coating,
- salt, pepper (to taste),
- sunflower oil (for frying).
Divide the chicken fillet into small, more or less equal pieces. Lightly break them with a pestle (through food foil), forming round chops.
Combine olive oil with garlic and herbs squeezed by Prague. Mix to paste and rub it with pieces of fillet. Leave for at least an hour at room temperature. If you have more time, put the meat in the fridge. Before further processing, remove the meat from the fridge early enough to warm up.
Combine the egg and cream. Season with salt and pepper. Grate the cheese on a fine grater. Mix with Panko. Heat oil in a frying pan (at medium burner power). Surround the chops in the egg, then in breading. Fry until golden color-about 2-3 minutes on each side. Put the fried cutlets on a paper towel so that the excess fat is absorbed.
