If you buy eggs in the store, they will probably be practically clean. This is due to the manner of breeding hens, where the paths of the eggs in the hall are treated so that they practically do not have the opportunity to get dirty. But if you buy eggs from a private, or you go to your own chicken coop, they will look a little different. But beware: their washing would be a big mistake that could cost you your own health.

Protection against contamination and drying out

Freshly laid eggs are covered with a natural protective layer that protects eggs in nature, from which to hatch the next generation, from bacteria contamination. At the same time, it should prevent unnecessarily rapid drying of the shell content, because it is formed so that it can penetrate the air, so it is gently porous. This means that it also allows the evaporation of the liquid that is located inside. And all of this is in charge of the so -called cuticle, which the eggs are wrapped in during the process of their work.

Do not stow the eggs washed

Now it is becoming clear why it is a bad idea to wash the eggs with water. This soluble coating, which in normal circumstances ensures longer durability and health safety, would take it quickly. We would have no choice but to consume eggs in the shortest possible time – that is, before it can “infect” dangerous microorganisms.

Use a dry path

So how can we deal with coarse dirt that eggs can take on the refrigerator or pantry before placing them? Leave the water aside, use just a dry sponge for dishes or a fine brush. This is the only safe way to get rid of dirt, but you will not break unnecessarily protective cuticle. If you take care of the eggs properly, you do not have to worry about leaving them for up to two weeks at room temperature without having to worry about their consumption.

Up to five weeks in the fridge
