As soon as the first young cabbage appears at the stall, it should be properly used in the kitchen – it is not only delicious, but also a very healthy vegetable. What if you prepare juicy cutlets that not only vegetarians will love? This recipe is a real treat for anyone who values seasonal cuisine.
Prepare the following ingredients:
- 1 small young cabbage,
- 1 small carrot,
- 2 eggs,
- 1 onion,
- 2 cloves of garlic,
- half a teaspoon of savory,
- ⅓ teaspoon thyme,
- Salt and pepper,
- breadcrumbs for coating,
- Frying butter.
Divide the cabbage into smaller parts. Put in a pot, pour water and salt. Boil and leave on medium heat for about 10-15 minutes. Then strain and grind. You can also cut very finely.
Peel and grate the carrots on a fine mesh. Peel the onion and garlic, then chop finely.
Fry the onion, garlic and carrot in butter.
Add grated carrots, chopped onion and garlic to the cabbage. Stake the eggs, pour in the savory, thyme and season with salt and pepper as desired.
Mix everything thoroughly so that the ingredients combine. If the mass is too loose, add a little breadcrumbs to thicken it. Form small chops from the prepared mass. Gently coat each cutlet in breadcrumbs.
Heat the butter in a frying pan. Fry the young cabbage chops on medium heat on both sides until golden brown.
