The domestic does not have much in common with the bought, it is not sweetened, it does not have artificial aftertaste and every drop smells of the sun, fresh air and flowers just torn on a walk.
Bezu’s smell belongs to spring as inherently as the singing of birds or the first grilling in the garden. When the shrubs bloom, the air is filled with a sweet narcotic smell that attracts not only bees but also housewives. It is then that the ideal time comes to collect a few flowers and start preparing home elderberry syrup. The bought tastes completely different – and who once tried his own, will never return to the bottle from the store.

The smell is reflected in the resulting taste
The advantage of elderly is that it grows almost everywhere. It can be found on limits, by forest roads, along fences and in parks. It is only important to choose flowers as far away from roads and urban bustle. We collect them ideally on a dry and sunny day, when they are fully developed and smell most intense. Their aroma is crucial, because it is reflected in the resulting taste of the syrup.
“Harvest the whole inflorescence of freshly unfavorable creamy white flowers, and do not forget to keep at least a few flowers on the bushes so that birds can enjoy elders in late summer,” advises The Spruce Eats.
The basic preparation is surprisingly simple. The flowers are loaded into the water with the lemon slices and allowed to leach for a few days. Then the infusion is drained, the sugar is added and the mixture is briefly boiled. The result is a dense, fragrant syrup, which has only a name with the industrial version. Home syrup is light, floral, with a slightly lemon undertone and especially without chemistry.
You can easily use the syrup
The syrup can be used in dozens of ways: lemonades with sparkling water and ice, tea instead of sugar, pancakes, desserts, or even as a basis for summer cocktails. In the fridge it will last several weeks, with the correct moon. But most importantly, you will prepare it exactly according to your taste. You can add more lemon, a little mint or a few drops of vanilla extract.
Be elderly syrup is not just ordinary sweetness. It is a taste of childhood, a reminder of my grandmother’s kitchen and also the opportunity to use the gifts of nature. All you have to do is look around – maybe you will find that the raw materials on the home treasure grow directly behind the fence.
