When you say a meatball, most of us recall the Sunday lunch at my grandmother. But how about trying this Czech classic on the grill? It may sound unusually, but in this way preparations will get a completely new dimension. Gently smoke aroma, crispy crust and juicy center – this is a combination that will surprise even steak lovers.
Barbecue is no longer just about sausages or American burgers. More and more people return to the roots and give a chance to traditional Czech cuisine – only in a slightly newer coat. And grilled meatballs are proof of that. They are no fast food pancakes in the bun, but an honest mixture of meat, garlic, marjoram and breadcrumbs, as we know it from childhood. In addition, they get a fine smoked aroma and a golden crust on the grill, which you simply do not conjure up from the pan.

The basis is quality ground meat
The basis is good minced meat – preferably a mix of beef and pork. The mixture is added finely chopped onions, crushed garlic, salt, pepper and of course marjoram, without which it would not be. An important ingredient is also an older croissant or bread soaked in milk, which gives the meat softness and suppleness. The egg combines everything, and then just shape the patties and let them rest in the fridge for a while to hold the shape.
On the grill, the meatballs are best prepared on a cast -iron plate or in a grill pan to keep them juicy and disintegrate. No big tricks are needed – just patience and the right temperature. Allow them to pull them on one side, then turn and bake until golden brown. The result is a crunchy surface and a beautifully soft interior that smells of garlic and marjoram, just as we love it.
Potato salad or bread with mustard
They can be served differently – with bread and mustard, with cold potato salad or with fresh vegetable dip. And even if it would be offered to serve them in a lump, as we know it in burgers, you can best enjoy Czech meatballs with bread, dip and vegetable salad.
Grill meatballs are proof that even a traditional recipe can work great in a modern concept. Without complexity, without foreign influences – just an honest taste that will please anyone who prefers Czech classics.
