Cake ingredients:
- 500 g of cake flour,
- 30 g of fresh yeast,
- 2 teaspoons of sugar,
- 200 ml of water,
- 2 eggs,
- 80 g olive oil (or oil),
- 1 teaspoon of salt.
Ingredients for stuffing:
- 120 g of mozzarella (in the ankle),
- 120 g of smoked ham,
- A handful of fresh herbs (for decoration),
- 250 ml of tomato puree,
- 2 tablespoons of olive oil,
- 2 cloves of garlic,
- 1 teaspoon of oregano,
- ½ teaspoon basil,
- a pinch of cane sugar,
- Salt, pepper (to taste).
Water all ingredients to room temperature. Heat the water to around 35-37 ° C. Crush yeast with sugar at the bottom of the glass (or similar dish). When they dissolve, add half the water and 2 tablespoons of flour. Mix thoroughly. Cover the glass with a cotton cloth and set aside for 15 minutes in a warm place. The solution should be foaming and enlarged its volume. Sift the rest of the flour to a large bowl (or mixer bowl). Mix it with eggs, the rest of the water and salt. Add the leaven and knead the whole (manually or with a mixer hook) to a smooth, flexible dough. Add the oil when kneading.
Cover the cake bowl with a cotton cloth and set aside in a warm place for about 1-1.5 hours-until the dough doubles its volume.
Knead the risen dough again and divide into 12 equal parts. Form balls from them. Put a 25×40 cm baking tray with baking paper. Arrange in it – at equal intervals – cake balls. Put on for half an hour to continue to grow.
Peel garlic and squeeze through the press. Heat oil with garlic in a saucepan. When the garlic begins to fry, add tomato puree, herbs and a pinch of cane sugar. Season the sauce to taste with salt and pepper.
Grate the mozzarella on a grater. Cut the ham into strips.
Flatten in each of the crown of cakes (they can even stick together – and so it will happen when they grow while baking), make a hole in it and fill it with a portion, sauce, mozzarella and ham. Insert into the oven preheated to 200 ° C. Bake for about 20-25 minutes-until the pizzerines are browned. Sprinkle them with chopped herbs before serving.
