Recipe for nettle syrup
Nettle syrup is a great natural refreshment that you can easily prepare at home. There are several variants of this recipe. Let’s look at two of them. You will need approximately 1 to 1.5 cup of fresh nettle leaves for the first variant. First, wash them thoroughly to remove dirt, and then immerse them for 5-10 minutes in warm water to neutralize their stinging effects. After drying, add the leaves to the pot together with 2 cups of water and 1 cup of white sugar. You can also add juice or lemon peel to highlight the taste, or add spices such as cinnamon or ginger. Bring the mixture to a boil and stir until the sugar is completely dissolved. Then wean it and leave to infuse for about an hour. After drying the resulting syrup, pour it into a clean glass and store it in the refrigerator.
The second variant of the recipe focuses to make the nettle extract stronger. Therefore, use several large handfuls of fresh nettle tops that you chop gently. Add about 2 liters of water to the pot, bring to a boil and then cook for about 10 minutes. Add juice and bark of one lemon, and if you like spices, add a little cinnamon, ginger or star anise, which gently wrinkle in the mortar before adding. After cooking, drain the liquid and return it to the pot. Add brown sugar in the amount that corresponds to the resulting consistency, ie approximately 500 g of sugar per liter. Heat until the mixture is reduced by one fifth and obtains a syrup consistency. Then move it to the glasses, close and keep it cold.
