Bottom:
- 4 eggs,
- 100 g cukru,
- 90 g of wheat flour,
- 30 g kakao.
Butter cream:
- 1 packet of vanilla pudding,
- 500 ml of milk,
- 4 tablespoons of sugar,
- 200 g of soft butter,
- 2-3 tablespoons of egg liqueur.
Cherry layer:
- 300 g cherries without seeds
- 1.5 teaspoons of gelatin + 3 tablespoons of hot water,
- 3 tablespoons of sugar,
- 1 teaspoon of potato starch,
- 1 tablespoon of lemon juice.
Separate the protein from the yolks. Beat a stiff foam with a pinch of salt. When they are stiff, gradually add sugar, whipping all the time. Then add one yolk, mixing all the time at low speed.
Sift flour and cocoa, gently mix into the egg mass with a spatula.
Pour the dough into a 24 × 24 cm mold lined with baking paper. Bake in an oven preheated to 170 ° C for about 30 minutes. After baking, cool the sponge cake.
In 400 ml of milk, boil 4 tablespoons of sugar. In the remaining 100 ml of milk, spread the pudding powder. Pour the mixture into boiling milk and cook, stirring intensively until the pudding thickens.
Cover the pudding with cling film (it should touch the surface of the pudding) and set aside to cool completely.
Grate the soft butter to a fluffy mass. Then gradually, spoon by spoon, add cold pudding, mixing all the time.
Finally, add 2-3 tablespoons of egg liqueur and mix briefly. Put the cream on a cooled sponge cake and level the top.
Now make a cherry layer. Pour gelatin with hot water and mix. Transfer cherries to a pot, add sugar and boil. Then add lemon juice.
Spread the potato starch in a little cold water. Add to cherry and heat further, stirring all the time. Boil and remove from the burner. Add gelatin, put again to heating. Heat the smallest burner power briefly and mix until the gelatin dissolves. Do not bring to a boil.
Put the cherry frużeline on the cream, spreading it gently. Put the dough in the fridge for a few hours to make the layers concentrate well.
