To prepare this recipe, you will need:

  • 30 g of fresh yeast,

  • 350 g of wheat flour (type 650),
  • 200 g of wholemeal rye flour (type 2000),
  • 1 teaspoon of salt,
  • 2-3 onions,
  • 1 teaspoon of cane sugar,
  • 3 tablespoons of clarified butter (for frying).

Crush yeast to a bowl and crush with sugar. When they start working “, dissolve them in about 1/3 of the water and set aside (covered with a cloth) in a warm place for about 15 minutes.

Sift both flour into the bowl. Add salt, the rest of the warm water and the yeast leaven. Produce all ingredients (manually or with a mixer with hooks) for a smooth, thick, slightly adhesive dough. If it turned out too dry, add some more water. Put the ready dough in a sufficiently large (dough will significantly enlarge its volume) clean, slightly greased bowl. Wrap the bowl with cling film and put in the fridge overnight.

The next day, warm the dough to room temperature. Peel and chop the onion finely. Fry in clarified butter in golden color. Sprinkle the onion with cane sugar before frying.

On a flour -sprinkled board, make the dough again, combining it with still warm onion. Put the dough in a warm place to continue to grow (in a greased bowl, covered with a cloth). Leave it for 30-40 minutes.

Put a cast iron pot or other heat-resistant vessel (with a cover) with a capacity of about 5-6 liters in the oven. Heat the oven to 220 ° C.

After about a quarter of an hour, form an oval loaf from the dough. Carefully remove the hot dish from the oven and transfer the dough to it. Cover with a hot lid and put back in the oven, while reducing the temperature to 200 ° C. Bake for 30 minutes. After this time, remove the lid and bake for another 20 minutes. Cool bread on a grid.
