Hetman cheesecake On almond cookies it has a slightly orange note and is delicious creamy. I often do it on weekends, especially when I expect guests.
- 120 g of almond cookies (amaretti or similar),
- 3 eggs,
- 500 g serne snollar,
- 120 g cukru,
- 1 packet of vanilla sugar,
- The skin is rubbed from 1 orange,
- 100 g cream 30%,
- 30 g of flour,
- a pinch of salt,
- Butter to lubricate the mold.
Dram the cookies in a mixer or put in a plastic bag and crush with a roller. Spread the crumbs evenly at the bottom of the mold.
Separate yolks from proteins. Grate yolks with cheesecake cottage cheese, sugar, cream, orange peel and vanilla sugar to a homogeneous, creamy mass. Add flour and mix.
Proteins beat to a stiff foam with a pinch of salt. Gently mix the foam into the cheese mass, being careful not to damage the dough fluffiness.
Heat the oven to 160 ° C. Lubricate the sides of the form with a diameter of about 22 cm with butter, and put the bottom with baking paper.
Transfer the mass into the mold, level the top and bake for about 1 hour and 15 minutes until the cheesecake obtains a golden brown color from the outside. Then turn off the oven and leave the cheesecake for another 15-20 minutes in the ajar oven.
