Have you got bored of tomato, borscht and cabbage soup? Try to prepare another, forgotten Polish soupwhich once was one of the most popular dishes. She was eaten so often that she was jokingly referred to as a poor dish. Today, however, she has gone into oblivion.
Of course, it is a cancer soup, which can be eaten today almost exclusively in good restaurants for considerable moneyand its preparation is not so complicated. If you want, you can do it yourself. Your family will definitely be positively surprised.

Currently, the cancer soup is considered a rarity Served in exclusive restaurants. In the nineteenth century, however, it was a culinary treasure, whose advantages were written in many books. It is prepared from fresh crayfish, and in addition to crustaceans also from vegetables, aromatic herbs and spices.
It is worth eating cancer soup for many reasons. It is not only tasty and nutritious, but also light, because it contains only 81 kcal in 100 grams. In addition, it has a number of health -promoting properties to offer.
In the cancers, which are its base, there is a full -fledged protein, and this is known, it has a positive effect on muscles. They also contain unsaturated fatty acids, including Omega-3, supporting brain condition, as well as: calcium, phosphorus, vitamins: C, E, D and B vitamins.

You can try cancer soup in a good restaurant, but nothing prevents you from preparing it yourself at home. In some Polish stores you can easily find frozen crustaceans.
Ingredients:
- crayfish (frozen/ fresh) – minimum 10 pieces
- broth – about 1 liter
- Egg yolks – 2 pieces
- Butter – 50 grams
- Tart roll – 1 tbsp
- Cream (30 percent) – 30 ml
- sun
- pepper
- nutmeg
- dill
- croutons/ bread
At the beginning Boil the broth and then throw frozen crayfish into it. Let them stay in boiling water for 10 minutesthen leave them so and wait for them to cool. Only then take them out of the pot.
Pull the meat out of the crustaceans and put it into a bowl, pour the broth, so it won’t be dry. Finely grind the shells and fry in butter to get a beautiful orange color.
A cancer butter will be created, which you should then put in a pot with broth and boil for 5 minutes. In the next step, strain the soup, pour 1 ladle into a bowl, add some cool water, egg yolks and breadcrumbs.
Mix Pour the mortar into the pot and mix, and then season with cancer soup with salt, pepper and nutmeg. Serve with cancer meat and bread or croutons.
