Rhubarb is one of those products that is the first to appear in vegetablemen in spring. Season for him It starts at the end of April or at the beginning of May. We can enjoy sour stems until mid -June. So let’s hurry before the season ends. It is not long, and it would really be a shame to miss him.
You can prepare many sweet preserves with rhubarb. It is great to convert to compote e.g. in combination with apples, strawberries. We will make it from it pancake jampies, waffles. Often, with fresh rhubarb, we meet baked goods in the form of cookies and cakes. My favorite rhubarb cake is definitely with cheese.
The dough with rhubarb and cheese is delicious. As soon as the season begins, I rush to the greengrocer for pink stems to prepare a dessert for Sunday afternoon. I can’t always wait for me to eat them again and my family. Each time it disappears from the sheet in a few moments And there are not even crumbs. Be sure to prepare while you buy fresh rhubarb.
Ingredients for cheese:
- 400 g of greasy or semi -fat curd (ground three times),
- 3 yolks,
- 70 g cukru,
- A spoon of potato starch.
Cake ingredients:
- 125 g butter,
- 150 g of fine sugar,
- a teaspoon of vanilla extract,
- 2 large eggs,
- 180 g of wheat flour,
- 60 g of potato starch,
- 1.5 teaspoons of baking powder,
- 90 g sour cream 18%.
Additionally:
- 350 g of rhubarb cut into medium cubes.
Preparation method:
1) Start by preparing the dough. Put butter, sugar, vanilla extract in the mixer bowl and grate them to a fluffy, very light mass. When you achieve the desired consistency, start adding eggs during grinding. Whip to combine the ingredients.
2) Sift wheat flour with potato starch, baking powder and add sour cream to the beaten ingredients. Mix the mass only to combine the ingredients. The dough should come out thick.
3) Prepare a separate bowl. In it Place all the ingredients on the cheese mass. Mix them thoroughly and rub the spoon with your back. The mass should be uniform and smooth. Then she is ready.
4) Put the form with dimensions of 23 x 30 cm with baking paper and put the dough into it. Align them with a spatula. Pour the cheese mass onto the dough and spread it evenly. Place the chopped rhubarb on top of the cheese.
5) Bake the dough in 170 degrees Celsius for 50-60 minutes. After this time, pull them out of the oven and set aside to cool.
6) Before serving, sprinkle the dough with rhubarb and cheese with powdered sugar.
