Bottom:
- 250 g butter biscuits,
- 150 g of melted butter.
Raspberry jelly:
- 600 g of fresh raspberries,
- 50 g cukru,
- 1 tablespoon of lemon juice,
- 25 g of gelatin + 5 tablespoons of water.
Cream:
- 750 g mascarpone,
- 250 g cream 30%,
- 300 g of white chocolate.
Additionally:
Start by making a raspberry jelly. Pour gelatin with water, mix and set aside to swell. Place raspberries in a pot, cover them with sugar and pour in lemon juice. Heat until they boil, fall apart and release the juice. Mix very often. Then add swollen gelatin, turn off the heating and leave the pot on the burner. Mix so that it combines well with the other ingredients. Set aside so that it thickens gently. Then pour it into a cake tin with a diameter of approx. 24 cm lined with cling film (so that it is better pulled in to the dough later). Put in the fridge for a minimum of 4 hours.
Prepare the bottom. Crushed biscuits and mix with melted butter. Put on the bottom of the mold and put in the fridge for 20 minutes.
Now make a cream. Break the chocolate into small pieces and dissolve in a water bath. Set aside to cool. Mascarpone cheese and cream, beat together until the stiff mass begins. Then pour the melted chocolate and mix until the cream becomes fluffy with a uniform consistency.
Fold the cake for Mother’s Day. Put raspberries evenly on the bottom of the biscuits. Then spread the cream, leveling the top. You can leave a little for decoration. Place the raspberry jelly on the cream. Finally, the time has come for decoration. Make a decoration with the help of a confectionery sleeve and butt from the remaining cream, as well as spread the fruit. Put the cake in the fridge for a minimum of all night.
