Juicy chicken on rice. The family will be full

Chicken served in the company of rice and vegetables is a classic in many Polish homes. He is fast, simple and liked by almost everyone. This recipe is slightly different – the dish is beautifully served and much richer in taste. Chicken legs are first seasoned with marinade. Thanks to this, they come out expressive and juicy. Rice enriches a mixture of vegetables – mushroom, onions, garlic and corn. Thanks to this, the dish is more filling and much tastier. The whole dish is served in an ovenproof dish – like a casserole, so it can be a dish both at a more elegant family celebration and during everyday dinner.

Ingredients:

Chicken:

  • 6 skin without skin,
  • 2 tablespoons of olive oil,
  • 2 teaspoons of brown sugar,
  • a teaspoon of oregano,
  • a teaspoon of sweet pepper,
  • a teaspoon of granulated garlic,
  • a teaspoon of granulated onion,
  • a teaspoon of salt,
  • 1/2 teaspoon thyme,
  • 1/4 teaspoon of black pepper.

Rice:

  • 300 g of long -grained rice,
  • 300 ml of poultry broth,
  • 275 ml of hot water,
  • onion,
  • 4 cloves of garlic,
  • 4 tablespoons of oil,
  • 2 tablespoons of butter,
  • half a can of corn,
  • a teaspoon of salt,
  • 1/4 teaspoon of black pepper.

Mushrooms:

  • 500 g mushrooms,
  • a handful of green onions,
  • 2 tablespoons of butter,
  • 2 cloves of garlic,
  • 1/4 teaspoon of salt,
  • 1/4 teaspoon of black pepper.

Additionally:

  • parsley to sprinkle.

Method of performance:

Prepare mushrooms. Heat the butter in a frying pan. Fry finely chopped garlic for 30 seconds, then add chopped mushrooms. Fry until tender. Add finely chopped green onion. Season with salt and pepper. Set aside

Prepare the chicken. In a bowl, mix olive oil, sugar, oregano, pepper, onion and granulated garlic, thyme, salt and pepper. Wash and dry the meat with paper towels, and then cover them well with the previously prepared marinade. Set aside for about an hour.

Prepare rice – Cook al dente. Grease a large heat -resistant dish with fat – oil, oil or butter. Add finely chopped onion, garlic, oil, salt, pepper, hot broth and water, butter. Mix the whole until a uniform consistency. Add rice and corn, mix them well with a fork so that they are well covered with liquid. Add mushrooms and mix them so that they spread evenly in the mixture. Put the chicken legs on top.

Cover the heat -resistant vessel with aluminum foil and put in an oven set to 180 degrees Celsius. Bake the dish for 30 minutes, and then discover it, spray the meat with additional oil and continue baking for another 25-30 minutes. Turn on the browning or grilling option for the last 5 minutes.

Serve the chicken on the riceimmediately after preparation, sprinkled with chopped parsley.
