Ingredients:

  • 2 chicken breasts,
  • 2 large tomatoes,
  • 200 g evening mozzarella,
  • 50 g of mushrooms,
  • 50 ml of tomato passage,
  • 1/2 teaspoon oregano,
  • 1/4 teaspoon of salt,
  • 1/4 teaspoon of black pepper.

Method of performance:

Wash and dry the meat. Cut the breasts into medallions, along the short side, so that the slices have a shape similar to the wheel. Rub the chicken on all sides with spices.

Pour the tomato passata into the heat -resistant dish. Put chicken medallions on it.

Clean the mushrooms and cut into thick slices. Put them evenly on top of the meat, and then sprinkle with half the mozzarella cheese.

Cut the tomatoes into slices about mid -cm thick. Place 1-2 slices on top of each medallion to cover almost the entire surface of the meat. Sprinkle the top with remaining cheese.

Put the heat-resistant dish in a furnace set at 180 degrees Celsius and bake for 25-30 minutes, until the meat and mushrooms are completely baked.

4 minutes before the end of baking, increase the temperature to 220 degrees Celsius or start the barbecue function.

Serve baked chicken medallions hot, immediately after preparation, preferably sprinkled with fresh rosemary.

Store the remains in the fridge under cover and use within 24 hours. Heat in the oven, under aluminum foil.
