Cooked broccoli may be one of the nightmares of school canteens, but when you bake it in the oven, it suddenly becomes a completely different vegetable. Gentle, slightly crunchy, odorless and, moreover, perfectly tunes with taste -bold partners. Add fresh strawberries, a few pieces of salty feta and lemon dressing and you have a surprisingly fresh and unusual salad on the plate, which not only looks good, but also tastes great. And what is best – it is finished in a moment and can be done by anyone who can turn on the oven.

Start by divide the broccoli into the smallest roses. The smaller they are, the faster they bake and bake beautifully inside. Put them in a bowl, sprinkle with olive oil, season with salt, pepper and mix with your hands to wrap each piece. Then spread them on a baking sheet lined with baking paper and place in an oven preheated to two hundred degrees. Bake for about fifteen to twenty minutes until the rosettes turn golden and start to catch the color at the edges. It is this golden crust that gives them taste and flair, which you will never get when cooking.

In the meantime, prepare other ingredients. Wash the strawberries and cut into thicker slices or quarters, depending on the size. Crush the feta into larger pieces – it should not completely fall apart, on the contrary, it looks good in the salad as a distinctive element. Measure two tablespoons of olive oil into a small bowl and add half the lemon juice. If the strawberries are more acidic, you can slightly soften a few drops of honey. Mix everything.

Stir gently to prevent it from falling apart

As soon as the broccoli cools down a little, mix it in a larger bowl with strawberries, feta and prepared dressing. Mix gently so that the strawberries remain as close as possible and the feta does not fall apart. If you have fresh basil or mint leaves at hand, feel free to add them – the herbs will give another fresh tone. And if you want a little crispy, dry sunflower seeds work great.

The salad tastes best lukewarm or at room temperature, but you can also serve it chilled. It works great as a light lunch, a supplement to grilled meat or as a dinner with a slice of bread. Most importantly – broccoli finally tastes to everyone.
