This is one of the tastiest cakes in the spring. Almond tart with rhubarb

Few people know that rhubarb is not included in fruit, but vegetables. This fact may be surprising, because we usually use it for desserts. One of the delicious proposals with rhubarb in the lead role is tartbutter dough. You can make a baking filling, among others, from a combination of sour rhubarb stems, petals and almond flour, and butter. The dough is easy to prepare, and at the same time tastes great, everyone who tries it will certainly eat.

Ingredients for the bottom:

  • 225 g of wheat flour,
  • 150 g of butter,
  • 30 g of powdered sugar,
  • 1 egg in size L or XL,
  • 2-3 tablespoons of water,
  • ½ teaspoon salt.

Filling ingredients:

  • 300 g of rhubarb,
  • 50 g of almond flakes,
  • 150 g of fine sugar for baking,
  • 150 g of butter,
  • 150 g of almond flour,
  • 1 egg in size L or XL,
  • 2 teaspoons of grated orange peel,
  • 1 teaspoon of almond extract,
  • ½ teaspoon salt.

Prepare the bottom. In the kitchen work, mix the butter with flour until the whole has the consistency of breadcrumbs. Add powdered sugar, egg and salt. Mix again. Slowly add a spoonful of water until a uniform dough begins to form. Transfer the dough into a top covered with flour and roll it out into a cake with a diameter of about 30 cm. Transfer it to a 22 cm diameter tart, lining the bottom and sides. Cut off the possible excess or wrap inside.

Put the bottom in the fridge for at least 30 minutes. Then put parchment paper on top and fill it with dry beans, which will press the dough. Put them in the oven preheated at 200 degrees Celsius and bake for 15 minutes. Then remove the weights and put the bottom into the oven again for 5-6 minutes. Remove and cool for 10 minutes.

Prepare the filling. Grate the butter with sugar to obtain a light and fluffy mass. Add almond flour, egg, orange peel, almond extract and salt. Mix to connect. Apply the mass to the chilled bottom. Smooth with a knife. Wash the rhubarb and cut into small pieces. Press them into the filling. Sprinkle the top with almond flakes.

Put the almond tart with rhubarb into an oven preheated to 180 degrees Celsius and bake for 45-55 minutes, until the top slightly swells and the almonds brown. Take the dough out of the oven and cool completely before serving.
