There is nothing better than a combination of sweet cake and sour fruit. These are the rhubarb muffins additionally overclocked with delicate, butter crumble. Just combine a few ingredients, pour them into molds, and the rest will make the oven. Check a simple recipe.
Muffin rhubarb dough is made of popular ingredients – Certainly each of us has them in their kitchen. In this recipe, we add, although nothing prevents you from using other fruits, e.g. strawberries, for which the season also lasts. We can also enrich these small pastries with cinnamon, raisins, cranberry and nuts.
Cake ingredients:
- 100 g rhubarb + 1 tablespoon of sugar;
- 100 g of natural yogurt;
- 1 egg;
- 1 cup of wheat flour;
- 1/3 cup of oil;
- 1/3 cup of sugar;
- 1 teaspoon of baking powder.
Ingredients for crumble:
- 2 teaspoons of wheat flour;
- 1 teaspoon of soft butter;
- 1 teaspoon of powdered sugar.
To make rhubarb muffins, we prepare rhubarb at the beginning: cut off its tips, cut into smaller pieces, cover them with sugar and set aside for an hour.
After this time, strain the rhubarb and add yogurt, egg, oil and sugar to the juice. Mix the whole until the ingredients are combined.
In the next step, add flour and baking powder to the resulting mass and mix everything thoroughly. Pour the prepared dough into curlers to 3/4 height. We put rhubarb pieces on top, gently pressing them.
Then we make crumble: just mix all the ingredients – the crumbs will be formed, which we sprinkle the top of the muffins. We bake them in an oven preheated to 180 degrees for about 20 minutesfor a dry stick.
