Hand -made potato dumplings with bear garlic are second to none. They are characterized by a delicate and melting consistency, and the unusual aroma of bear’s garlic remains in memory for a long time. These dumplings will be An ideal addition to meats or vegetables, but they will also work as an independent dinner dish – All you need is a little favorite lard. It is worth adding that low -calorie bear garlic is a rich source of vitamins (especially K and group B), minerals (magnesium and potassium) and strong antioxidants.
Ingredients:
- 400 g of potatoes,
- 50 g of bear garlic,
- 125 g of wheat flour,
- 1/2 teaspoon of salt.
Additionally:
- Salt for cooking potato dumplings and potatoes.
Method of performance:
Wash and peel the potatoes. Cut them into medium-sized cubes and cook until tender in salted water for 10-15 minutes in salted water.
Strain the potatoes and leave them on a hot but off burner for 5 minutes, shaking from time to time.
Wash the leaves of the bear’s garlic thoroughly and dry on the kitchen cloth. Then chop them finely.
In the blender, blend the potatoes with garlic until a smooth mass is obtained.
Add flour and mix the whole until a smooth and handless dough is formed. If necessary, add more flour.
Working in batches, roll out the dough into a thin roll on a flour -covered board. Cut it into pieces about 1.5-2 cm long with a sharp knife.
Boil salted water in a large pot. Put the potato dumplings on boiling water and cook them on a slow fire until they come to the surface. Choose them with a slotted spoon and put it on a plate smeared with butter.
Serve the dumplings with bear garlic with the addition of a lard made of onions or bacon. They also taste great with roast or mushroom sauce.
