The smell of molten cheese, tomatoes and basil is a common backdrop for Sunday lunch in the Calabrian streets. But this delicate, saturated goodness known as Parmigiana, you can easily prepare you at home.
The Parmigiana Calabrian, baked eggplant with tomatoes, cheese, and in this version of IS spicy sausage and boiled eggs, is an example of how simple ingredients can create an unforgettable dish. In Calabria they often serve it as a main course, usually during family weekend lunches. It is a food that attracts its smell, structure and taste. The eggplants, tomato sauces, provolone cheese, eggs and hot ‘ndes together create harmony that will delight every true lover of Italian cuisine.

Recipe for baked eggplant after Calabrijsk
To prepare you will need four eggplant, two eggs, about half a liter of tomato sauce, 400 grams of provolone or provol, 300 grams of spicy salami, ideally Calabrian ‘nduja. You also need 200 grams of grated parmesan, several leaves of fresh basil and one garlic clove. Also prepare smooth eggplant flour, frying oil, extra virgin olive oil and salt with pepper to taste.
Cut the eggplant into thin slices, add salt and let them “sweat” in a colander under load to release excess juice. In the meantime, cook the eggs hard and cut them into slices. Likewise, cheese and spicy salami. Heat the tomato sauce with garlic, a little olive oil and basil leaves in a smaller saucepan. Do not forget to remove the garlic after a while. Dry the eggplant with paper wipes, wrap in flour and fry until golden brown. Pour a little tomato sauce with oil into the baking dish first, then layer eggplants, salami, cheese and eggs. Continue this until you run out of raw materials, with the last layer with only sauce and parmesan. Bake in an oven preheated to 200 ° C for about 30 to 40 minutes until the surface becomes golden and a crispy crust is formed.
How to fine -tune the recipe to perfection
To adjust the recipe to your own and experiment a little with tastes, you can use grilled eggplant instead of fried, thus lightening the food. If you do not get ‘nduju, other spicy salami, such as Spanish chorizo, will also serve. For the vegetarian version, just skip salami and add roast peppers or grilled zucchini. The cheese layer can also be supplemented with mozzarella for a creamy texture. But you can also add a pinch of chili or a drop of balsamica for extra taste to the tomato sauce.
