When you say a Scandinavian dessert, most people recall something simple, domestic and honest. This is exactly what is æblekage – traditional Danish apple “cake”, which does not bake, but folds into glasses. Despite the fact that the word cake is in the title, with a classic roast dessert, this dessert only has in common that it disappears equally fast.
Apple cake in a æblekage -style glass is one of those desserts that have gained a cult position in Scandinavia. Although he is called a cake, he does not bake in the oven for a minute. It is a layered unbaked dessert that combines the best of the sweet world – fine apple puree, fragrant crispy crumbs and fluffy whipped cream. The result tastes like a home comfort that you can enjoy at any time of the year. But most pleased in the spring and summer, when no one wants to turn on the oven, but the taste of something sweet will come.

Apples should be more acidic
The basis is apples, ideally a little more acidic, which boils to soft with cinnamon, sugar and a drop of lemon. The resulting puree should be smooth, fragrant and only slightly sweet. It is thanks to this subtle sweetness that the contrast with dry roasted crumbs, which resemble a sweet breadcrumbs or finely caramelized butter crumbling, stands out. In Denmark, home breadcrumbs are most often used from darker bread or sponge residues, which give dessert a pleasant structure and taste.
The whole magic of this dessert lies in simple layering. The glass is first put a little apple puree, a crunchy layer and finally a whipped cream. Then again – apples, crumbs, whipped cream. You can layer at will, but it is always good to end up with something that looks nice – ideally whipped cream with grit on top. In Denmark, there is also often add currant marmalade, grated chocolate or ground nuts, but also the classic version of the tasty.
Preparation is extremely simple
The preparation is simple, everyone can handle it and you are done in half an hour. The advantage is that you can prepare everything in advance – the puree will last for several days in the fridge, the crumbs can be kept in the jar and the whipped cream just whip just before serving. It is suitable for celebrations, coffee, and as a light dessert after lunch.
Although æblekage is not yet known in our country as Tiramisu or Virgin Cotta, it certainly deserves attention. Its simplicity, softness and nostalgic taste reminiscent of apple compote of childhood make it an ideal dessert for every occasion. Plus – she looks really beautiful in the glass.
