Rag It is a cake that can brighten even the most gloomy or rainy day. You can prepare them from frozen strawberries, but now that the season lasts, it will be best to taste with fresh fruit. The sponge cake should be soaked with a punch, you can make it on the basis of amaretto liqueur. You can decorate the finished dessert with whipped cream. If you prepare this cake once, you can be sure that the family will quickly ask you to bake it again.
Before you start preparing this recipe, get the right form. Works well sheet metal measuring 38 × 24 cm.
Ingredients for sponge cake:
- 6 eggs,
- 150 g of wheat flour,
- 120 g of powdered sugar,
- A bit of salt.
Ingredients for punch:
- 100 ml of white tea or water,
- 1 tablespoon of sugar,
- 1 tablespoon of amaretto liqueur.
Foam ingredients:
- 300 g of fresh or thawed strawberries,
- 125 g cukru,
- 350 g of natural yogurt,
- 4 tablespoons of lemon juice,
- 9 gelatin petals,
- 400 g cream 30 percent
Ingredients on top:
- 1 strawberry jelly,
- 500 ml of water.
Start by making the bottom. Separate the protein from the yolks. Place in a large bowl, add a pinch of salt and beat to a stiff foam. When the foam is stiff, gradually, spoon by spoon, add powdered sugar, whipping all the time at high speed until the mass is shiny. Then add one egg yolk, mixing all the time at lower speed, only to combine the ingredients.
Sift wheat flour and gently mix into the egg mass with a spatula or kitchen rod.
Pour the mass into a 38 × 24 cm mold lined with baking paper and level the top. Put in the oven preheated to 170 ° C (top-down) and bake for about 35-40 minutes until the sponge cake is grown and elastic. Set aside to cool completely.
Prepare the foam. Mash the fruit on purée (it’s best to blend them). Mix them with sugar, yogurt and lemon juice. Soak gelatin in cold water, but don’t press it. Then dissolve on low heat, but do not cook it or heat it hard. Add to strawberry cream and mix thoroughly. Set aside for a moment. Whip the cream 30% on a stiff foam. When the strawberry cream begins to solidify slightly, gently mix in the whipped cream into it. Spread the finished strawberry layer on a baked biscuit. Set aside in the fridge.
Now make jelly according to the instructions on the packaging. When it solidifies, pour it onto a piano cake. Put in the fridge to cool completely.
