Children love Pancakes. However, classic pies from the International House of Pancakes recipe have a lot of powdered sugar, flour and oil, as well as little protein. That is why it is worth modifying it a bit. For preparation Cottage cheese cakes for Children’s Day You will need:
- 1 tablespoon of powdered sugar,
- 1 tablespoon of vanilla sugar,
- 250 g of cottage cheese,
- 3 eggs,
- 45 g of flour.
By adding cottage cheese, the protein content will increase significantly – choose a thin or semi -fat version. If we do not want to add vanilla sugar, we can replace it with a few drops of vanilla extract.

Transfer the cottage cheese into the bowl. Proteins separate from the yolks – Put the proteins to a dry and degreased metal bowl, and add the yolks to the cottage cheese. Crush cottage cheese. If children like delicate lumps, you can leave them, if not – crop quite accurately. Finally, add powdered sugar and vanilla sugar (or vanilla extract) and mix the whole. Beat the proteins to a stiff foam, then gently combine with the cheese mass. Fry curd pancakes in a dry pancake pan (or Teflon) after 2-3 minutes on each side.
