When I feel like a light lunch, I make this salad. It works particularly great for work – such a filling meal during the day is it. It is also a good option for a delicious dinner. Combination of meat with sweet and sour navy blue This is one of my favorite combinations.
- 1 chicken breast fillet,
- half a teaspoon of ground sweet pepper,
- 4 handfuls of rockets,
- 5-6 pickled mushrooms,
- half a pomegranate (the grains themselves),
- 1 tablespoon of olive oil,
- Salt and pepper (to taste).
Sos:
- 2 tablespoons of olive oil,
- 1 tablespoon of balsamic vinegar,
- 1 teaspoon of honey,
- half a teaspoon of dijon mustard,
- A pinch of salt and pepper.
Chicken breast fillet season with sweet paprika, salt and pepper. Fry in a tablespoon of olive oil for about 5-7 minutes on each side until golden. After frying, cut into thin slices or cubes. Sealed mushrooms cross -section in half or slices.
Prepare the sauce, in a bowl, mixing olive oil, balsamic vinegar, honey, mustard, salt and pepper.
Place the rocket on the plate, add pieces of chicken and fried mushrooms. Sprinkle the salad with pomegranate. Pour the prepared balsamic sauce.
