Cake with strawberries and rhubarb This is one of the simplest pastries with the addition of seasonal fruit. It goes reliably. Just remember that after obtaining a fluffy egg mass, do not mix the ingredients for too long.
Cake ingredients:
- 3 eggs,
- 160 g cukru,
- 1 packet (16 g) of vanilla sugar,
- 125 ml of sunflower oil,
- 330 g of natural yogurt,
- 320 g of wheat flour,
- 2 teaspoons of baking powder.
Ingredients for crumble:
- 100 g of wheat flour,
- 60 g cukru,
- 60 g of cold butter.
Additionally:
- 150 g of rhubarb,
- 150 g of strawberries,
- 2 teaspoons of potato starch,
- 2 tablespoons of cane sugar.
Warm all ingredients (except butter) to room temperature. Place the ingredients for crumble (butter – chopped). Connect them, rubbing with your fingers (do not knead). When you get a mass with a papular consistency, put a bowl in the fridge during further preparation.
Grate eggs with sugar and vanilla sugar to a light, fluffy mass.
Briefly (only to combine the ingredients) mix the egg mass with yogurt and oil. Sift flour and baking powder to the mass. Mix with a spatula into a uniform dough.
Wash rhubarb and strawberries. Cut the rhubarb stems into small pieces. Strawberry cross -section into halves. Combine in a bowl and sprinkle with potato starch. Mix gently.
Liberate and sprinkle with breadcrumbs with a 25×25 cm breadcrumbs. Transfer the dough into it. On top, scatter the rhubarb with strawberries evenly. Sprinkle with cane sugar and then crumble.
Insert in the oven preheated to 180 ° C. Bake for about 45-50 minutes (to a dry stick).
