For preparation Grandma’s lemon cake for the summeryou only need a few simple ingredients:
- 1 tablespoon of butter,
- 100 g cukru,
- 2 tablespoons of potato flour,
- 2 tablespoons of lemon lemon peel,
- 2 yolks,
- 200 g of biscuits,
- 500 ml of milk,
- 80 ml of freshly squeezed lemon juice,
- Lemon slices and mint leaves for decoration.
If you want, you can add a few drops vanilla or almond extractand also sprinkle the finished cake grated white chocolate. A good option will also be to add your favorite jam between the dough layers.

Start by boiling 350 ml of milk in a saucepan with sugar and lemon zest. In the meantime in a separate bowl Mix the remaining 150 ml of milk, lemon juice, potato flour and yolksuntil the mass is uniform. When the milk begins to cook, pour in the prepared mixture into it, stirring constantly until the pudding thickens (about 2-3 minutes). Remove from heat, add butter, mix and set aside until slightly cool. At the bottom of the square form of 20 × 20 cm, arrange the first layer of biscuits.

Apply a portion of a still warm lemon cream on it, spreading it evenly. Repeat the action until the ingredients run out, remembering that the last layer is the cream. Leave the ready dough to cool at room temperature and then Cool in the fridge for a minimum of 4 hourspreferably all night. Thanks to this, the cream will become even more velvety, and the biscuits will absorb perfectly. Before serving, decorate the dessert with lemon slices and mint leaves. Ready!
