The Michelin Polska guide currently includes 108 restaurants, including a new restaurant awarded with Michelin star, which increases the number of premises with this prestigious award to seven. Both local residents and people visiting Poland, who value good cuisine at an affordable price, will certainly be happy to add seven new restaurants with distinction from Bib Gourmand.

For the third year in a row, the Krakow Bottigleria 1881 was awarded with two Michelin stars, strengthening its position as the best restaurant in Poland. Bold in taste and extremely original dishes gave inspectors great pleasure. They decided that the kitchen fully deserves to maintain this prestigious distinction.

Warsaw hub. Praga receives a Michelin star

The most exciting news of this year’s edition is the fact that Hub. Praga became the third Warsaw restaurant awarded with Michelin star.

The restaurant, whose head and owner is Witek Iwański, is fully deserved to be a prestigious award – for exceptional attention to detail and flawless culinary technique visible in every dish. The basis of the kitchen are the highest quality natural ingredients, which are erected to an even higher level thanks to excellent sauces and the ability to create intensive and at the same time perfectly balanced flavors. The Michelin guide inspectors were particularly delighted with the excellent homemade bread, the original dish of crayfish in Polish (Polish crayfish royale) and butter ice cream with salted caramel.

Currently, there are six restaurants with one Michelin star in Poland. All of them maintained their distinctions: Arco by Paco Pérez in Gdańsk, Giewont in Kościelisko, Muga in Poznań and Warsaw Nut and Rozbrat 20.

In addition to the new Michelin star, seven subsequent Bib Gourmand awards for Polish restaurants were announced. This award, named after Bibendum – the official name of the Michelin guy – is awarded to premises offering a high -quality kitchen at a reasonable price. This year’s list is great news for everyone who wants to enjoy excellent food at an affordable price.

Three of the new Bib Gourmand awards went to restaurants included in the first in the history of the Wrocław selection. Located in the very center of the city BABA It is an ideal place for an evening out – natural flavors are beating from each dish, and joyful service creates a free and pleasant atmosphere. In Krakow, the Bib Gourmand distinction went to the restaurant NOAHserving an appetizing Israeli cuisine, which guarantees an excellent value for money. Here, even the simplest dishes are impressive – like a classic homemade pita, sprinkled with olive oil and sprinkled with stone salt.

In turn, in Zakopane, he joined the Bib Gourmand family Old bear. The restaurant delighted the menu based on excellent ingredients and skillfully prepared dishes that do not ruin the wallet. An additional advantage of this place is its location at the foot of the Tatra Mountains.

Poznań can boast of the fourth distinction of Bib Gourmand – this time for a restaurant Placelocated in the Jeżyce district. The menu is focused on traditional French cuisine, and classics, such as Pâté en Croûte, are prepared with craftsmanship and precision.

A new Bib Gourmand distinction for restaurants has also appeared in Warsaw Break out. This unique and intriguing place draws inspiration from Slavic mythology, serving the full taste of traditional cuisine in a cozy, moody atmosphere.

Fourteen Polish restaurants, which previously received the Bib Gourmand distinction, maintained their decorations: Hewelke and Treinta Y Tres in Gdańsk; Folga and Molám

These premises are an inspiration for both kitchen enthusiasts and the entire gastronomy industry.

Last year, the Gdańsk elixir was the first in Poland a green star, and this year the team successfully maintained this distinction. The philosophy of waste reduction and the use of local products are the foundations of the restaurant’s approach to modern gastronomy that make a huge impression.

This year, in addition to new Stars and Bib Gourmand awards, four Michelin special prizes were also awarded for exceptional people and teams, which in the past months particularly delighted the inspectors of the Michelin guide.

Michelin award for the opening of the year: Trick, Gdańsk

After ten years of work in Gdynia, an experienced chef and owner Rafał Wałęsa decided to move his restaurant to Gdańsk – and it turned out to be a hit. A trick, located opposite the building of the Museum of World War II, is an elegant, comfortable and perfect place. Wałęsa’s dishes are based on a solid technical workshop, combining the classic influence of French cuisine with Polish accents. The inspectors were delighted not only with the kitchen and interior design itself, but also a cordial, professional and passionate service, which made a trick with an obvious choice for this award.

Michelin award for service: Beata Śniechowska, Baba & Young Poland, Wrocław

Beata Śniechowska – one of the most recognizable figures of the Wrocław gastronomic scene – is a person with many talents. First of all, the chef in this year’s inaugural selection of the Wroclaw Michelin guide has two restaurants: Young Poland and the awarded Bib Gourmand Baba. Even when she works in the kitchen, he watches over the quality of service with full commitment, ensuring that her teams create a warm and hospitable atmosphere. In a woman, where it is most common every day, there is a free, cordial atmosphere, and Śniechowska herself often serves dishes to guests. In young Poland, from the first moments you can feel free thanks to a certain yourself, kind and competent team. It is building when the chef thus consciously emphasizes the role of service and puts it on an equal footing with the quality of the kitchen served.

Michelin award for Sommelier: Jan Winiarski and Aleksandra Harabasz, Dilettants, Warsaw

Most restaurants dream of one outstanding sommelier. Diflemen have two of them! During inspectors’ visits in this unique Warsaw premises, the wine service was at the highest level thanks to the duo: Jan Winiarski, Sommelier and General Manager, and Aleksandra Harabasz, deputy main Sommelier. Winiarski is an extremely helpful and open person. He willingly proposes tasting portions of wines and supports guests in the choice, sharing his passion. Harabasz, with equally great passion, supports his guests and impresses extensive knowledge. She is a certified WSET trainer and the owner of Winiarska Nowoplaw. Both distinguished people take care of the impressive wine card together, with a particular emphasis on a great selection of burgundy.
