Potatoes in the freezer? At first glance it sounds like a kitchen disaster. But the truth is different: if you know how to do it, you can keep the potato goodness for months in advance – without turning it into a sweet, mushy matter.
Yes, potatoes can be frozen. But not raw
If you thought it was enough to go with them in the freezer – Hold!
Potatoes contain a lot of water and starch, and when you freeze them raw, they change them chemical properties. They will become sweetish and their texture will change to lumpy and grain.
And even worse: raw potatoes after freezing and subsequent frying can create a substance called Acrylamidewhich was associated with an increased risk of cancer in animal studies.
Solution? Cook the potatoes before freezing
To avoid deterioration, potatoes should be cooked at least partially before freezing. And good news – It’s easy.
How step by step:
- Peel and cut the potatoes Depending on how you want to use them later (cubes, wheels, puree…).
- Blanéshte – Throw them for a few minutes in boiling water until they are slightly soft.
- Zastavte var – Fold them into ice water to prevent boiling.
- Dry thoroughly – with a paper towel to avoid frost crystal.
- Pre -freezing (optional) – If you want to have the potatoes separate, spread them on a baking tray and freeze separately.
- Wrap – Use pockets or containers suitable for freezer, ideally with as little air as possible.
- Put them with them in the freezer! Be sure to mark them with a date.
How to defrost potatoes?
- Puree, baked and boiled potatoes: Allow to thaw overnight in the refrigerator.
- French fries or other fried potatoes: Don’t discardPut straight on a pan or fryer – they will be crunchy!
