The unique taste of orange pancakes has its own Roots in French cuisineand the inspiration for their creation was the famous Suzette pancakes – dessert served with orange butter and liqueur. There is no alcohol in our recipe, but there is no shortage of elegance and an intense citrus aroma.
The pancakes are light, but at the same time expressive in taste. Thanks to the natural sweetness of fruit, they do not require a large amount of sugar. Their preparation is not difficult, and the end result is impressive. This is a great choice for those who have already mastered making classic pancakes and are looking for something extraordinary.
Ingredients:
Pancakes:
- a glass of wheat flour,
- 2 eggs,
- a glass of milk,
- 1/2 cup of orange juice (freshly squeezed),
- 2 tablespoons of sugar,
- a pinch of salt,
- A tablespoon of melted butter or oil.
Orange sauce:
- 100 ml of orange juice (freshly squeezed),
- The skin is rubbed from 1 orange,
- 2 tablespoons of sugar,
- 2 tablespoons of butter.
Method of performance:
In a bowl, mix the flour, eggs, milk, orange juice, sugar, salt and melted butter or oil. Mix to obtain a smooth consistency. Set aside the dough for 15-30 minutes to rest.
Fry thin pancakes on both sides in a golden color in a hot pan with a little fat. Put the ready pancakes on a plate.
To prepare an orange sauce, dissolve the sugar in a frying pan until it begins to caramelize. Add butter and mix to combine the ingredients. Pour orange juice and add orange peel. Cook on medium heat until the sauce thickens slightly. Optionally, add orange liqueur and cook for a while.
Fold the pancakes into triangles or rolls and place on a plate. Pour them with a warm orange sauce. Serve immediately, optionally decorating with fresh orange particles or mint leaves.
