Meat cake – It sounds intriguing, right? Under this name there is a recipe that will work as a dinner element or a filling dinner, as well as a snack for a party.
The plans of the dough superior with a meat stuffing with the addition of aromatic spices simply taste delicious. You can eat this cake simply alone or with the addition of your favorite salad when we want it to be an element of a nutritious dinner.
Shortbread:
- 300 g of wheat flour,
- 100 ml of olive oil,
- 5 tablespoons of cold water,
- 1 teaspoon of baking powder,
- 1 teaspoon of vinegar,
- ½ teaspoon salt.
Stuffing:
- 500 g of minced lamb or veal meat,
- 1 onion,
- 3 tablespoons of olive oil,
- 3 cloves of garlic,
- 2.5 cm of ginger root,
- ¾ teaspoon of cumin,
- ½ teaspoon salt,
- ½ teaspoon of black pepper.
Additionally:
- 1 egg for spreading,
- parsley for decoration.
Prepare the stuffing.
Chop garlic and ginger very finely with hand or kitchen work. Heat olive oil in a frying pan and fry them for a minute.
Add minced meat and finely chopped onion. Fry the whole for nice browning, crushing the stuffing with a spoon in the meantime.
Season with the remaining spices.
Prepare the bottom.
In a large bowl, mix the flour, baking powder and salt. Then add olive oil and mix the dough with a fork.
Add water and vinegar. Mix everything with your hands. If the mass is too dry, add another tablespoon of water.
Divide the dough into two parts and form balls. Put one of them between two pieces of parchment paper and roll out to a circle with a diameter of about 30 cm. Put the dough with a slightly greased tart form with a diameter of 22 cm. If necessary, take the edges with a knife.
Fold the meat dough.
Put parchment paper on the bottom and place a few weights on it – e.g. dry beans. Bake the dough for 20 minutes at 180 degrees Celsius. Then remove the weights and paper; Continue baking for another 5 minutes.
Spread the meat mixture evenly into the baked bottom, smoothing the top.
Roll out the second ball into a cake with a diameter of about 25 cm and cover the minced meat.
In a bowl, break the egg and smear the top of the shortcrust pastry.
Using a sharp knife, make a few cuts on top.
Put the meat cake in the oven set to 180 degrees Celsius and bake it for 30 minutes or for nice browning. Remove and set aside 15 minutes before cutting.
