Cheesecake with strawberry mousse This is a perfectly creamy dessert with seasonal fruit. Such a dough will work as a daily afternoon tea for afternoon coffee, and even as a dessert for special occasions.

You will need a round form to prepare this cake, it works best cake tin with a diameter of 18 centimeters.

Ingredients for sponge cake:

  • 60 g of wheat flour,
  • 100 g cukru,
  • 3 eggs,
  • 30 ml of rapeseed oil,
  • 1 tablespoon of water,
  • 1 teaspoon of honey,
  • ½ teaspoon vanilla extract,
  • ¼ teaspoon of baking powder,
  • ¼ teaspoon of salt.

Ingredients for the cheese layer:

  • 1 kg of cream cheese,
  • 300 g of fresh strawberries,
  • 120 g of condensed milk,
  • 120 g of granulated sugar,
  • 75 ml of water,
  • 1 tablespoon of gelatin,
  • 1 teaspoon of vanilla extract.

Ingredients for strawberry mousse:

  • 350 g of strawberries,
  • 60 ml of water,
  • 4 tablespoons of sugar,
  • 2 tablespoons of lemon juice,
  • 2 tablespoons of gelatin.

Prepare a sponge cake. Protein separation from yolks. Beat the white until soft peaks, then add 1/3 of the sugar and beat stiffly. In a large bowl, grate yolks with other sugar, salt, water, honey and vanilla. The mass should be bright and fluffy. Add half the protein foam and mix gently.

Sift flour and baking powder for a mixture of yolks with sugar, in three parts. Mix gently every time. Then add the oil. Add the remaining proteins to the dough and gently mix, only to combine the ingredients.

Pour the mass into a cake tin with a diameter of 18 cm lined with baking paper and put in the oven set to 180 degrees Celsius. Bake a sponge cake for about 20 minutes, to a dry stick. Remove and cool, then put the dough into the cake tin again.

Prepare a cheese layer. Mix gelatin with water. Set aside In a bowl, grate cream cheese, condensed milk, vanilla and sugar. Add gelatin with water. Mix well.

Clean strawberries. Some of them cut in half and spread them vertically along the edge of the cake tin. Cut the remaining fruits into small cubes and mix with cheese. Pour the cheese mass onto the baked bottom, pressing hard to fill all the gaps. Put the dough in the fridge for at least 3 hours.

Prepare a lot of mousse. Put the fruit into a blender and crush the smooth consistency. Strain them through a sieve. Spread gelatin in the water and set aside. Add it to the fruit mass and mix.

Pour the mousse on the frozen cheesecake. Put the whole in the fridge for about 2 hours. Serve the cheesecake with strawberry mousse.
