Zucchini It is a vegetable valued for a unique, delicate taste and a lot of nutritional values. It just reaches the peak of her form in the summer – it is incredibly firm, juicy, the best. As soon as he appears in the bazaars, until he is asked to take her home and prepare something delicious for the family.
I most often make zucchini cream soup – this culinary proposal is a combination of freshness, lightness and delicacy, but in a unique style. It can be safely stated that such a cream is sophisticated, it can be served in various ways, for example with crunchy croutons or puff peas. Decorated with herbs, it looks even better. You can also turn up its taste, even with the help of Parmesan cheese.
Let’s not forget that zucchini cream soup is not only delicious, but also healthy and low -calorie. Such a dinner is an alternative to harder dishes for me. I don’t need anything else in the summer.

Ingredients:
- 900 g of zucchini,
- liter of vegetable broth,
- 1 onion,
- 3 cloves of garlic,
- 3 tablespoons of cream 30%,
- Salt and pepper,
- A pinch of nutmeg.
For frying:
- a spoon of oil,
- A spoon of butter.
To be provided (optional):
- puff peas,
- croutons,
- Parmesan.
Wash zucchini, cut out the tips. Cut in half, cut into smaller pieces.
Cut the onion and garlic finely.
Heat oil and butter in a larger pot, add garlic and onion. Fry on low heat for about 5 minutes.
Then add broth and zucchini. Cook for about 30 minutes from the moment of boiling until the zucchini softens.
Then crush the zucchini with a blender, add spices and about 2 tablespoons of cream. Stir.
Serve the zucchini cream soup hot, serve with any additions – puff peas, croutons or cheese.
