Zucchini This is a very healthy vegetable, it is low in calories, easily digestible, and in addition it is widely used in the kitchen. It works great for digestion, supports cardiovascular work, and has antioxidant properties, so it’s worth including it in the diet as often as possible. We serve it most often in dinner dishes, but it works well for preparation snack. We’ll tell you how to make zucchini morsels, which will be great during events, as well as as a light addition to dinner, lunch, or a snack to the evening
To prepare this tasty snack, you will need:
- 2 average courgettes (approx. 500 g),
- 2-3 tablespoons of olive oil,
- 3 cloves of garlic,
- 1 teaspoon of lemon juice,
- salt and freshly ground pepper,
- 150 g of natural or Greek yogurt,
- 1 clove of garlic,
- parsley or dill to taste,
- 1 teaspoon of dried herbs (e.g. thyme, oregano or Provencal).
Ready zucchini You can serve solo or prepare for them Thick Greek style dip. All you have to do is grate the green cucumber on a grater and then squeeze excess water from it. Then add a few tablespoons of Greek yogurt to it, garlic squeezed through the press, salt and pepper, and a slightly grated lemon zest.
Wash the zucchini, dry and cut into slices about 1 cm thick – the slices can be left in full form or cut in half (“morsels”).
Peel the garlic and squeeze through the press. In a bowl, mix olive oil, lemon juice, squeezed garlic, salt, pepper and herbs. Coat each piece of zucchini thoroughly in marinade. Set aside for 10-15 minutes so that zucchini absorbs the taste of herbs and olive oil.
Heat the grate/pan, arrange the slices and grill after 3-4 minutes on each side until brown stripes and zucchini appear softens
In a bowl, combine yogurt, squeezed garlic, season with salt, pepper and chopped parsley or dill. Arrange the hot zucchini morsel on a platter, serve with the sauce prepared. You can decorate with fresh parsley or mint leaves.
