Fragrant, supple and literally packed with fresh cherries. This is exactly the Greek cherry cake that will become your summer favorite. It tastes great for breakfast, as an afternoon dessert and a festive dessert.

The summer season of cherries is short but intense. And when you already have a basket of fresh fruits at home, it would be a shame not to use them. Greek cake with cherries offers a perfect way to enjoy their sweet taste in full beauty. Do not expect a heavy dessert with whipped cream. On the contrary! This delicacy is light, fluffy and yet full of fruit juiciness. It uses a minimum of butter and instead of it builds the whole recipe on Greek yoghurt, which gives the cakes a fine structure and suppleness. And what is the best? The preparation is surprisingly simple and everyone can do it.

A simple cake that looks like a pastry shop

The preparation of the cake begins with a simple dough of common ingredients: flour, eggs, a little butter and of course Greek yogurt. It is the recipe that plays a key role in the recipe, because it ensures a supple consistency without the need for a large amount of fat. The dough will taste quality vanilla extract and sugar. After whipping, a light, fluffy base is formed, into which the cherries are subsequently mixed.

Fresh dark sweet cherries work best, namely the solid and juicy ones that do not overcook when baking. It is important to bake them first, the fastest using a handy branch, and override. Half of the dough comes to the bottom of the greased form, then a layer of cherries, the other half of the dough and again the cherry. Several pieces can be added during baking, making it a beautiful look and a more pronounced taste on the surface.

It is baked in a round cake form, ideally in the form with a removable edge. The baking time is between 45 and 60 minutes, depending on your oven. Result? Beautifully golden cake that reveals a layer of cherries and fluffy dough when cut.
