They finally appeared in the stores domestic young potatoes. For now, they are small, which has its advantages – they are ideal for a salad. Choose the smallest specimens as possible – all similar in size. If you fail to get them, just cut the larger ones. A salad of young potatoes and low -salt cucumbers sharpened with the taste of red onion is a perfect dish for the upcoming hot days.
You will need: to prepare a delicious salad:
- 500 g of small young potatoes,
- 3 medium low -salt cucumbers,
- 2 red onions,
- a small bunch of parsley,
- 2 tablespoons of potato spice,
- 4 tablespoons of olive oil (+ for spraying potatoes),
- 1 tablespoon of lemon juice,
- 1 clove of garlic,
- Salt, pepper (to taste).
Rinse and scratch young potatoes. Spread on the oven baking tray lined with aluminum foil. Spray with olive oil and sprinkle with potato spice (you can also use a mix of your favorite herbs, combine it, e.g. with cumin, as well as with salt). Put in the oven preheated to 200 ° C. Bake until the potatoes are tender (about 40 minutes). Cool the baked potatoes and cross -section into halves.
Cut the cucumbers into slices, and peeled onions – into semi -slices. Finely chop parsley. Mix vegetables with cooled potatoes.
Combine 4 tablespoons of olive oil with lemon juice and garlic squeezed by Prague. Add sauce to the salad. Season with salt and pepper. Set aside for an hour (at room temperature) to make the flavors bite.
