Not so ordinary cucumber. I looked at this recipe at Ewa Wachowicz

This is one of my favorite soups, very nutritious, typically holiday – if you like the taste of low -salt cucumbers, you will like this recipe. The combination of vegetables and cream makes me always take an addition, just like other family members. It’s delicious.

• 5 low -salt cucumbers,
• ½ onion,
• 3-4 potatoes,
• 1 parsley,
• a piece of celery (root),
• 2 cloves of garlic,
• a small bunch of dill,
• 1 tablespoon of clarified butter,
• 150 g of cream (30%),
• about 125 ml of water from cucumbers,
• 1bed of water,
• 1 bay leaf,
• 2 grains of allspice,
• salt, pepper (to taste),
• Several radishes (for decoration).

Peel the onion and cut into cubes. Give in a pot in clarified butter.

Peel parsley, celery and potatoes. Cut the parsley and celery into particles. Add to onions. Fry.

Peel and chop garlic. Add to the rest of fried vegetables.

Pour the vegetables with water, slightly salt, add bay leaf, allspice and whole potatoes. Cook the vegetables until tender.

Strain the vegetables from the decoction. Put parsley and celery. Cut the potatoes into smaller particles and put back in the soup.

Cut the low -salt cucumbers in slices (preferably on mandolin). Add to boiling soup. Season it with salt and pepper. Cook for a while. At the end of cooking, add (to taste) water from cucumbers.

Hard the cream with hot soup. Pour into the pot. Boil.

Add chopped dill to the soup. Mix

Serve hot soup. After pouring onto the plates, decorate with slices of radishes.
