In Polish cuisine, beetroot, cucumbers and even with. Hardly anyone would think that you can make a cold tomato. In Spain, it is called Gazpacho and impresses with a sweet and covered taste with slightly noticeable sharpness. It is served in every restaurant, but also at summer family events, e.g. at a wedding. It’s time to get to know the recipe for tomato soup without cooking.
The main ingredient of Gazpacho are, of course, tomatoes. It is important that they are fleshy and sweet. We also use other vegetables, which are lacking in Polish tomatoes. I am talking about ground cucumbers, peppers, red onions, garlic and chili peppers that give focus. The whole is complemented by other add -ons, including standard spices.
What ingredients do we need to make Gazpacho? Here is the exact list:
- 1.5 kg of tomatoes;
- 3 ground cucumbers;
- 1 pepper;
- 1 red onion;
- 2 cloves of garlic;
- a small piece of chili pepper;
- 4 slices of bread without skin;
- 4 tablespoons of olive oil;
- 3 tablespoons of wine vinegar;
- 2 tablespoons of lemon juice;
- Spices: salt, pepper desired and a bit of sugar.
To make tomato soup without cooking, you should burn tomatoes at the beginning. For this purpose, we make cuts at the bottom and throw in boiling water for a while. Then peel these vegetables from the skins and cut into cubes. We can wipe them through a strainer if we want to get rid of seeds.
In the next step, we prepare the remaining vegetables: peel and cut cucumbers, do the same with peppers, onions and garlic. We put everything into one pot and add chili pepper, as well as torn bread without skin.
We blend everything. Then add olive oil, wine vinegar, lemon juice and add salt, pepper and a little sugar. We put Gazpacho prepared in the fridge for a few hours.
Before serving the “cold” tomato, we recommend decorating it with crushed feta cheese and fresh mint leaves. We can replace them with basil or parsley.
