Ingredients for pancakes:

  • 250 ml of milk,
  • 250 ml of sparkling mineral water,
  • 2 eggs,
  • 230-250 g of wheat flour,
  • a pinch of sugar,
  • a pinch of salt,
  • clarified butter (for frying).

Ingredients for stuffing:

  • 600 g of pork shoulder meat,
  • 150 g of cheese,
  • 1 onion,
  • 1 clove of garlic,
  • 1 teaspoon of oregano,
  • 1 teaspoon of basil,
  • 1 teaspoon of sweet pepper,
  • 2 tablespoons of tomato concentrate
  • rapeseed oil (for frying).

You can serve ready -made pancakes with tomato sauce with the addition of basil, oregano and garlic. It will fit here too Homemade garlic dip.

Prepare the cake for pancakes. Combine milk, sparkling water and eggs in a bowl. Mix with a whisk. Gradually add flour, mixing the dough to combine the ingredients. Add enough flour so that the dough obtains the consistency of liquid yogurt. Season them with salt and sugar.

Heat a pancake pan on a medium power burner. Grease a little clarified butter (repeat this activity every second pancake). Apply the dough to the pan with a vase spoon, and then spread evenly on the surface of the pan. Fry each pancake for about 45 seconds on each side.

Prepare the stuffing. Chop the onion and garlic. Fry the onion with a small amount of oil. At the end of frying, add garlic, and after a while – meat. Fry them in brown color. Add tomato concentrate, sweet peppers and herbs to the meat. Season to taste with salt and pepper.

Grate the cheese on large grater mesh. Mix with cooled meat. Fill the pancakes with stuffing and place on the baking paper lined with a baking tray. Brush the pancakes with a little oil.

Insert the pancakes into the oven preheated to 190 ° C. Bake for about 15 minutes. Serve with your favorite sauce.
