Chocolate -based desserts do not have to be high in calories. Our Mareczka’s delicacy recipe It is low -calorie and very simple, thanks to which even a confectionery man will be able to handle it. Additionally It also does not contain white sugar, it has a low glycemic indexwhich is why it will be a great choice for diabetics, people with insulin resistance, and all those who want to lose weight and at the same time want to eat a tasty dessert. It is worth adding that zucchini, which is a mass base, contains a lot of dietary fiber, Thanks to which after eating a piece of cake, you will feel full for a long time.
Before you start baking, get the right form. We recommend 25 cm long cake.
To prepare this cake, you will need:
- 1 zucchini (medium -sized),
- 90 g of coconut oil,
- 2 eggs,
- 100 g erythrytolu,
- 1 teaspoon of soluble coffee,
- 160 g of whole grain wheat flour,
- 25 g of oat flour,
- 25 g of bitter cocoa,
- 1 teaspoon of baking powder,
- 70 ml coconut milk,
- 100 g of dark chocolate.
You can serve the finished dough or prepare the version richly, i.e. serve it with a knob of favorite ice cream, e.g. vanilla and creamy or whipped cream.
- Peel the zucchini and grate the grater on small meshes. Slip off excess juice.
- Melt coconut oil and cool down.
- Grate eggs with erythritol. Adjust the amount of sugar replacement to your preferences.
- Combine the mass with eggs with oil and zucchini. Add a teaspoon of coffee to it.
- Sift both flour, cocoa and baking powder to the mass. Mix to combine the ingredients.
- Transfer a thick dough to a 25 cm long baking tray. Put in the oven preheated to 180ºC. Bake for 40-45 minutes (to a dry stick).
- If you want to enrich the dough with a chocolate coating, grate about 40 g of dark chocolate on fine grater. The rest crumble and tune in a saucepan with the addition of coconut milk. Mix to a uniform sauce.
- Pour the slightly cooled coating dough. Sprinkle with chocolate chips. Put in a cool place until the topping freezes.
