You have no idea for Sunday dinner? Prepare a simple and exquisite Chicken rolls with goat cheese. The meat comes out extremely juicy and delicious, it goes well with goat’s filling, and tomato sauce and fresh thyme. You can serve a ready dish with pieces of baguettes, cooked potatoes or fries.
To prepare this recipe, you will need:
- 500-600 g of chicken breast fillet (1 double),
- 100 g of soft goat cheese.
- 1 red pepper,
- 1 onion,
- 2-3 cloves of garlic,
- 1 can of tomatoes (400 g),
- 200 ml of poultry broth,
- 1 teaspoon of basil,
- 1 teaspoon of sweet pepper,
- Salt, pepper (to taste).
Additionally:
- 1 tablespoon of butter,
- Frying oil,
- 1 tablespoon of fresh, chopped thyme for decoration.
Clean chicken breast fillets from membranes and cartilage. Cut off each breast in half, but not quite – so that you can open it like a book. Lightly break the meat with a pestle. Sprinkle with salt and pepper.
Apply the goat cheese to the prepared meat. Roll the chicken into rolls, closing the cheese tightly in them. Sprinkle each roll with a toothpick.
Fry the rolls briefly in a small amount of olive oil. Remove the chicken from the pan. Add a tablespoon of butter.
Peel the onion. Remove the seed nest from the pepper. Cut the vegetables into cubes. Transfer to a pan with hot fat and fry until tender. At the end of frying, add garlic squeezed through the Prague.
Combine vegetables with a pan with tomatoes. Then pour the broth into the pan and season the sauce with basil, both peppers, turmeric, ginger, salt and pepper.
Arrange the chicken rolls in an ovenproof dish and pour the sauce from the pan. Put in the oven preheated to 200 ° C. Bake for about 40 minutes. In the middle of baking, turn the rolls to the other side.
Serve chicken rolls with goat cheese sprinkled with fresh thyme.
