These chops are perfect as a substitute for a meat option, for example ground. They are delicious, very aromatic, I am happy to make vegetarian burgers with them.
- 4 medium carrots,
- 150 g of rice,
- 1 onion,
- 2 cloves of garlic,
- ½ small parsley, a small bundle,
- 2 tablespoons of clarified butter,
- 1 egg,
- 2 tablespoons of breadcrumbs (+ for breading),
- 1 teaspoon of curry (powder),
- salt, pepper (to taste),
- sunflower oil (for frying).
Cook al dente rice. Strain and set aside to cool.
Peel the carrots and grate the grater on small meshes.
Peel the onion and garlic. Finely chop. Also chop parsley.
Heat clarified butter in a frying pan. Fry the onion on it. Add garlic and carrots to the pan. Fry a few minutes – the carrot softens.
Combine vegetables with a pan with parsley and rice. Add egg and breadcrumbs. Make a hand to a homogeneous mass (put on gloves due to the fact that curry staines the skin). Season her curry, salt and pepper.
Form small chops from the mass. Coat them in breadcrumbs.
Heat oil in a frying pan. Fry the chops in golden color-about 2-3 minutes on each side. Place the finished cutlets on a paper towel sheet to absorb excess fat.
